Asparagus
Buy asparagus spears of the same thickness so they all cook evenly, and look for tightly closed tips. You can serve them hot with melted butter, or at room temperature with Vinaigrette Dressing (page 189) or hollandaise sauce.

24 stalks asparagus

Vegetable peeler

Steamer basket

Rectangular microwave-safe dish
Microwave plastic wrap Oven mitts
1. Wash the asparagus stalks carefully to remove any sand from the tips. Lay them on a cutting board and remove the pale woody bottoms with the small knife, cutting the stalks to a uniform length. With the vegetable peeler, peel each stalk, starting just below the tip and working down.
2. To steam: Fill a pot large enough to hold them with an inch or two of water, fit a steamer rack on or in it (depending on your equipment), and bring the water to a boil. With tongs, place the asparagus spears in the steamer in several layers, cover the pot, and lower the heat to moderate. After 6 minutes test the spears with the tip of the knife; the spears should be crisp-tender but not soft. Continue steaming until done, testing every couple of minutes.
3. To microwave: Arrange the stalks in two or three layers in a microwave-safe dish just big enough to hold them, with all the tips pointing in the same direction, and cover tightly with microwave plastic wrap. Cook at High for 7 to 9 minutes, depending on the thickness of the spears; fewer and/or thinner asparagus takes less time to cook. Take the dish out of the oven and on the far side, away from your face, pierce the plastic wrap with the point of the knife to let the steam escape. Slowly and carefully open the plastic wrap on the side away from you and test for doneness. Re-cover and cook another minute or two, if necessary.
